Based this off vanilla cupcake recipe, because…it just happened to be there. & there was bananas, because they were going to spoil. & biscuits…just because they were there.
Hey! Baking doesn’t have to be by the book and everything. It’s way more fun throwing in flavours you have around you and seeing what happens!
Thank goodness this experiment turned out EXTREMELY DELICIOUS!
And here’s the recipe (which is super simple!):
- 100g Soy Milk
- 1 teaspoon Vanilla Essence
- 150g Caster Sugar
- 225g Cake Flour
- Pinch of salt
- 150g Soften Butter
- 3 Eggs
- 2 very ripe medium size Bananas
- As much Crushed Milk Biscuits as you like
- As much Hershey’s Chocolate Chip as you like
As usual, measure out all the ingredients and prepare them accordingly: Soften the butter and sieve the dry ingredients.
Combine the milk, vanilla essence and eggs in one bowl and mix, but make sure not to over mix. Then cream the butter into the dry ingredients, and add the previous mixture little by little until it achieves a smooth consistency like the picture.
And here comes the star of the show: Bananas! Remember to use very ripe bananas as they are more fragrant!
Diced them up into tiny chunks and dump them into the mixture.
Try to mix the chunks in evenly without smashing them. It’s not difficult, just don’t apply too much elbow grease.
Scoop the final mixture into the cups, and sprinkle loads of crushed milk biscuits on top.
Dump them into a preheated oven and let it bake for 20-25 minutes at 200°C…and…..tadah!
They sure look good, but something’s missing!
Basically, melt the chocolate chips, fill them into a bag and start decorating!
They were absolutely delicious! The banana chunks were sweet and moist, which help the muffins from becoming too dry. Also, the crushed cookie top gave the soft muffin an extra crunch.
It was a great combination and I would definitely bake this again as there was great response from the family!
